Understanding how fermentable carbohydrates influence the oral environment, and in turn, caries risk, is key to helping the dental professional teach the patient about effective caries prevention. To that end, it is important to understand the factors that affect food’s cariogenicity and the Stephan responses of plaque pH to challenges by fermentable carbohydrates.
